The Food Science and Technology Study Program (ITP), Faculty of Agriculture, Hasanuddin University provides assistance to SMEs to implement safe and halal food products. Safe and halal food products are consumer demands that must be provided by food producers. Safe food is obtained through the application of Good Manufacturing Practice (GMP) in the food business / industry. Likewise, halal assurance is obtained by applying the Halal assurance system to products.
Based on this, it encouraged several Hasanuddin University lecturers to provide assistance and training on the application of GMP and the halal assurance system for Durian Holic UKM. They are part of the community service team through the Community Partnership Program (PKM) which is supported by LPPM Unhas and funded by the Ministry of Research, Technology and Higher Education. The team is Prof. Dr. Meta Mahendradatta and Dr. Muhammad Asfar, STP., M.SI from the Food Science and Technology study program and Muh Fajaruddin Natsir, SKM, M.Kes from the Public Health study program. Durian Holic UKM is one of Hasanuddin University fostered UKM partners, especially the Food Science and Technology Study Program.
In this activity, Prof. Meta delivered the material “Production and employee hygiene”. He explained that food must be attractive in terms of color, aroma and appearance, delicious, nutritious, safe and lawful. Safe means that food must be free from microbial contamination, harmful chemical / physical substances. Sometimes food manufacturers ignore this safe side and emphasize only the attractive and delicious side. To produce safe food, hygiene must be maintained. Hygiene refers to conditions and practices that help promote health and prevent disease outbreaks. Hygiene consists of personal and production hygiene. Personal hygiene refers to prioritizing body hygiene, while production hygiene refers to prioritizing the process of cleaning cleanliness from raw materials to products.
Regarding halal, the training stated that consumer trust in a product is very much determined by the legality of the product, including halal certification. The more complete information on the legality of a product, the higher the level of consumer confidence in the product. If you already believe, you will not hesitate to buy and consume it. With regard to halal certification, the government has regulated in Law (UU) No. 33/2014 concerning the Guarantee of Halal Products that products that enter, circulate and are traded in the territory of Indonesia must be certified halal.
Through this activity, it is hoped that it will encourage UKM Durian Holic to be able to obtain a One Star Food Safety Charter from BPOM as a form of GMP implementation and obtain Halal certification from LPPOM MUI from the application of the halal assurance system in its production process.
